So I committed to 3 days a week – no carbs for dinner for the month of June. I am hoping this eases me into this mindset to take on even after June – no carbs for dinner.
On Monday I made a chicken stirfry – so yum! It is one of our favourites! I make it with a lot of veg, and no starch (rice or noodles). With all the broccoli, cauliflower, peppers, mange tout, it fills you up super quick!
Last night we had some carbs – we made taco’s. A tasty, saucy mince; lettuce; tomatoes; sprinkled with a bit of cheese. So tasty. Are you like me, food makes me drool? Just typing this post is making me hungry! FEED ME! 🙂
So on to tonight I am going to try something I haven’t made before! A friend made it for me once, and it was so yum, so I am going to try replicate it! What is for dinner this eve? LETTUCE WRAPS!
I googled a bunch of recipes, but knowing how I work (I take after my mum – thanks mum!) – I am just going to wing it and use what I have already in the fridge and cupboards at home. I promise to post a pic of the final product!
Things I have in my fridge:
- Lettuce (duh, this is critical in making lettuce wraps!)
- Chicken (gonna grill this with some spices and some soya sauce!)
- Mushrooms (i have brown and white mushies – yum! mushrooms in anything works for me)
- Carrots (will julienne them, teeny tiny slivers)
- Mange Tout
- Baby Corn
- Sesame Seeds
and then knowing Rob, he will layer this with a bunch of hot sauces we have in the fridge – the man is addicted to sauce!
