New Recipe: mini quiches

Made this for dinner on Thursday eve and they came out so well! A friend saw the recipe on Facebook so I thought I’d give it a try!

Basically I grabbed two muffins trays, sprayed them with cooking spray and dug out every tasty ingredients had in the fridge! I chopped up spinach, mushrooms, peppers, tomatoes, and grated some cheese. Place the ingredients in the muffin trays. Sprinkle some herbs, salt and pepper to season.

Crack open 7 eggs and a bit of milk into a bowl and beat that nicely.
Then pour the egg mixture into the pans.

Then bake in a preheated oven at 180C for dinner15-20minutes.

The great thing about this is its carb free! Great for dinners, can be reheated the next day for lunch or put in the freezer (if they are gobbled up!). So tasty!
