What’s for dinner?

So I committed to 3 days a week – no carbs for dinner for the month of June. I am hoping this eases me into this mindset to take on even after June – no carbs for dinner.

On Monday I made a chicken stirfry – so yum! It is one of our favourites! I make it with a lot of veg, and no starch (rice or noodles). With all the broccoli, cauliflower, peppers, mange tout, it fills you up super quick!

Last night we had some carbs – we made taco’s. A tasty, saucy mince; lettuce; tomatoes; sprinkled with a bit of cheese. So tasty. Are you like me, food makes me drool? Just typing this post is making me hungry! FEED ME! 🙂

So on to tonight I am going to try something I haven’t made before! A friend made it for me once, and it was so yum, so I am going to try replicate it! What is for dinner this eve? LETTUCE WRAPS!

exps31525_LT950601C11_04_3c_WEBI googled a bunch of recipes, but knowing how I work (I take after my mum – thanks mum!) – I am just going to wing it and use what I have already in the fridge and cupboards at home. I promise to post a pic of the final product!

Things I have in my fridge:

  1. Lettuce (duh, this is critical in making lettuce wraps!)
  2. Chicken (gonna grill this with some spices and some soya sauce!)
  3. Mushrooms (i have brown and white mushies – yum! mushrooms in anything works for me)
  4. Onions
  5. Peppers
  6. Carrots (will julienne them, teeny tiny slivers)
  7. Mange Tout
  8. Baby Corn
  9. Garlic
  10. Sesame Seeds
  11. Ginger

and then knowing Rob, he will layer this with a bunch of hot sauces we have in the fridge – the man is addicted to sauce!

  1. Carbs are pretty much my favorite thing ever so this would be a very difficult challenge for me, but all that food looks delicious and I LOVE lettuce wraps! You are also way more organized than I am. I am a terrible meal planner. I need some of your motivation!
